Jakub Behind the Glass
From the streets of Wrocław to the canals of Amsterdam - a path shaped by curiosity, precision, and a deep respect for what the land gives us.
"Mother Nature expresses itself through the grapes in a certain terroir. My role is to carry this expression by tasting and sharing wine with You."
- Jakub, Clos de Jakub

WSET Level 3

Achieving the WSET Level 3 Award in Wines marked a pivotal milestone in my professional journey — a rigorous qualification that deepened my systematic approach to wine analysis, from viticulture and vinification through to service and business.
The qualification required mastering both the theoretical foundations of global wine production and the practical skills of blind tasting using the WSET Systematic Approach to Tasting (SAT) — an achievement that underpins everything I do at the table and in the cellar.

The Journey
Platinum Palace · Wrocław
2021Poland, Platinum Palace in my hometown Wrocław is a boutique 5-star hotel located on the border of town. The perfect environment to explore luxury hotel service - and the place where I started a new chapter in my life: wine and becoming a sommelier.
Młoda Polska Bistro · Wrocław
2022My next stop on the journey into the wine industry. Across my time at the bistro I clarified my style in wine tasting and service - be surprised, explore unexpected wines from small houses producing with respect to terroir and Mother Nature.
Bridges · Amsterdam
2024January 2024 I started at Bridges in Amsterdam. Fine dining and formal restaurants have always been my point of interest - finally here I can spread my wings wide open. Food is more than a resource of energy; it is art, memories and a journey you experience by diving into a menu combined with an awarded wine list of approximately 650 labels. You can find me there until today.
Bridges & Amsterdam
In 2024 I was scouted by the team at Sofitel Legend The Grand Amsterdam and offered the opportunity to join Bridges - one of the city's most acclaimed fine dining addresses. Not fully knowing what the cellar held in store, I accepted and dove in headfirst.
What I discovered was a 650-reference wine list - an extraordinary, living collection that became one of the most exciting challenges of my career. Exploring it label by label, vintage by vintage, remains a privilege and a joy I carry with me every service.
The need to share that passion further led me to founding Clos de Jakub. My hope is simple: to ignite curiosity in people - to help them find new flavours, travel through memories, and discover the world one glass at a time.
