Sommelier's Note
"Hibernal grown at the southern end of the Dalkowskie Hills, on a slope that falls south toward the Odra valley at close to twenty percent. Glacial clay over sand, 180 metres up, and autumns long enough to ripen the fruit without ever costing it acidity. The vineyard has been worked by hand since 2002, fed with manure from the stables down the road. Both fermentations run spontaneously here, the malolactic included, which is a deliberate decision on a grape this aromatic. Four months on the lees, two months in oak barrique, bottled unfiltered. It pours pale lemon, faintly hazy. The nose is loud and green in the best sense, elderflower and gooseberry over grapefruit and blackcurrant leaf, white peach sitting behind. Underneath, the lees and the malolactic bring hazelnut and a soft dairy roundness, with a trace of smoke from the short time in wood. Dry, the acidity supple rather than cutting, the middle fleshier than the nose prepares you for. Medium length, closing on grapefruit pith. Sauvignon Blanc aromatics with an older, rounder texture. Drink it this year or next, cold but not frozen."
