Sommelier's Note
"From an old parcel at the southern end of the Dalkowskie Hills, 180 to 200 metres up on a south-facing slope, on glacial clay over sand. Seven vintages in one bottle, 2019 through 2025, built the way a solera is built: each new harvest whole-bunch pressed, fermented in barriques on wild yeast, malolactic included, six months on its lees, then blended into the barrique that already hold everything before it. Bottled unfiltered in August 2026. Fine lemon gold. The nose has moved well past fruit. Dried pear and quince, beeswax, hazelnut, honey, a thread of elderflower still there from the Hibernal, and something smoky and savoury from years in wood. Dry, broad, almost waxy across the palate, with acidity holding underneath rather than cutting across. Nothing sharp anywhere. Long finish, nutty and saline."

Sandy clay loam over glacial till, classed III and IV on the Polish scale. Modest farmland, which is precisely why it suits vines.
Hibernal from one of the oldest parcels on the estate, high on a south slope in the Dalkowskie Hills where glacial clay meets sand and the Odra valley opens out below. Seven vintages live in this bottle, 2019 through 2025, built the way a solera is built. Each harvest comes in whole-bunch pressed, ferments in barriques on wild yeast with the malolactic running through, rests six months on its own lees, then joins the barriques holding everything that came before it. Bottled unfiltered in August 2026. It pours deep lemon gold. The nose has long since moved past fruit, into dried pear and quince, beeswax, hazelnut and honey, with a thread of elderflower still showing where the Hibernal started and something smoky and savoury from the years in wood. Dry and broad, almost waxy across the palate, the acidity holding underneath rather than cutting across it. Nothing sharp anywhere. The finish is long, nutty and saline. The most serious wine in the cellar and the hardest to replace. Roast chicken, veal, aged hard cheese, anything with brown butter. Serve at 12 °C in a proper glass.
